JESSICA’S PALEO PUMPKIN CHILI
Gather together the following ingredients:
·2-4 tbsp olive oil
·1 lb free-range ground turkey (or free-range grass-fed organic ground beef, or Bison, or Venison…basically whatever meat you like!)
·1 cup onions
·1 cup green bell peppers
·1 cup parsnips, chopped roughly
·1 clove garlic
·27oz. no-salt-added diced tomatoes
·1 cup pumpkin pureé
·2-4 tbsp ground chili powder (I use 3)
·2-3 tsp ground cumin (I use 2)
·½ tsp ground black pepper
·½ tsp Kosher salt
·Food processor
·Lidded stock pot and spoon
OPTIONAL
·½ to 1 tsp crushed red pepper flakes (I use ½)
·Hot sauce to taste
Chop the onion, green pepper, parsnips, and garlic in food processor (ROUGHLY), then add olive oil to the pot and heat. Add the chopped veggies along with the turkey (or whatever) and sauté until the meat is slightly browned. Pour off excess liquid and grease. Add tomatoes, pumpkin, chili powder, cumin, pepper and salt and mix well. Cover and simmer for 20-30 minutes. Serves 4.
